The Evolution of Espresso

Coffee, which originated in Ethiopia more than a thousand years ago, and was cultivated in Arabia, near Aden, has had a very particular influence upon mankind. Like wine, called in Arabic "qahwah" (from which the scientific name "Caffea Arabica" presumably originated), coffee was introduced into religious services of the Mohammedans because of its psychological action in dissipating drowsiness. But it was only after the invention of the first mechanical devices during the 18th and 19th centuries, and particularly after the introduction of the first sophisticated machines in Italy,- machines which could prepare a hot, rich, aromatic beverage any time during the day, the "express" way,- that coffee was really made popular in the Old World. Such "ESPRESSO" machines, produced in series, appeared for the first time at the 1906 exhibition in Milan. This is a very important date. From then on, coffee gained its real popularity in the most famous coffee houses in the various capitals of the Western World. The wits, philosophers, composers, singers, and writers warmed their hearts, loosened their restraint, gossiped and freely expressed their feelings and ideas over a steaming cup of espresso. This new aromatic beverage exalted their inspiration and enhanced the beauty of their masterpieces. In a poem, Talleyrand, referring to espresso, said in Italian:

Mixology in the Field of Exotic Coffees

Did you know that mixology, so widely popular in the field of liquors and liqueurs, can also be applied in connection with coffee? It's very simple! In the case of liquors, the base is the "spirit" or "alcohol," which is mixed with water, flavors, syrups, extracts, etc. In our case, the base is the ESPRESSO. And it is nothing else but an authentic essence of the pure coffee, which, because of its frothy top layer, has aquired in the Old World its particular name " Crema de Café" ("Cream of Coffee").

ESPRESSO " Crema de Café," made with hydro-compression espresso machines, has much less caffeine than regular coffee, and no acidity. Using full-bodied espresso as the base, we can "mix" it with many other ingredients, just like we do alcohol, and thus obtain a nice collection of recipes of the most delicious exotic coffees.



CAPPUCCINO L'AMOUR

When we first introduced our "CAPPUCCINO L'AMOUR," laced with six liqueurs, at the various Shows in the United States, we knew we would find a certain number of people who would like this product. But we never thought it would become popular to the extent that even large companies would come up with powdery and/or liquid ready-mixes which they would call "Cappuccinos." CAPPUCCINO is not a certain one product; it's generic name for a vast number of mixtures made with fresh espresso, milk and other ingredients. The "simple" Italian CAPPUCINO is only ESPRESSO topped with milk frothed under the steamjet of an espresso machine.
